Meal prep, meal prep, meal prep!
The easiest way to slip off of your resolution is by not having vegan foods readily available. Stock up your kitchen with only vegan options and start meal prepping weekly, so that you’re never caught in a pinch and temped to reach for non-vegan foods.
The vegan January challenge is not meant to feel daunting or un-doable. Think about it: It only lasts for a month (which is relatively speaking, not long at all) and involves trying new, wholesome, and tasty foods. Who knows?
